Isolate and enumerate wild yeasts encountered in brewing while suppressing pitching yeasts with Thermo Scientific™ Oxoid™ Lysine Medium (Dehydrated). This complex, synthetic medium is based on the original formula of Morris & Eddy1 which utilizes the susceptibility of pitching yeasts to lysine to differentiate it from the wild yeast.
Morris and Eddy1 described this complex medium for the isolation and enumeration of wild yeasts in pitching yeast in the brewery industry. Walters and Thiselton2 used a liquid synthetic medium containing lysine as a sole nitrogen source and found that many types of yeast utilize lysine. Later Morris and Eddy1 also formulated solid lysine medium. Most of the Saccharomyces strains used in the brewery industry and other fermentative industries do not use lysine, whereas the wild strains do.
